Ingredients

  1. 1 whole chicken – 1.4 kg.

  2. 2 spoons of green curry paste 

  3. 2 – 3 cups of coconut milk

  4. 6 – 10 Thai eggplant

  5. 3-4 stems of EATSI Thai Freeze Dried Thai Sweet Basil

  6. 2 red spur chilies

  7. 5 pieces of EATSI Thai Freeze Dried Thai Kaffir Lime Leaves

  8. 1/2 tsp. salt

Instructions

  1. Fry the green curry paste with some oil.

  2. Add coconut milk.

  3. Put chicken thigh after boiling.

  4. Add Egg Plant and Red Chilli, EATSI Thai - Freeze Dried Thai Sweet Basil, EATSI Thai - Freeze Dried Kaffir Lime Leaves

  5. Leave this to cook for about 3 or 4 minutes.

  6. Add sugar, fish sauce, and boil it about 2 or 3 minutes.

Ready to Serve.
